A unique and wild offering from Guatemalan with startlingly sweet cup, and strong blueberry and floral notes at lighter roasts. Darker roasts accent the sweetness lovely milk chocolate notes, and develop a full body, with lush sweetness and clove spice.
This unique coffee is the result of a newer processing style being called "carbonic maceration". The process inspired by wine grape fermentation, allows the coffee cherries to ferment in cold temperature for extended periods of time. After this fermentation the coffee is depulped and dried on patios like a classic washed coffee would be.
Grown in the hills surounding Lake Ayarza, this coffee benefits from the cooling effect the lake has on the surrounding area, along with its volcanic soils. In the area they grow Catuai, Bourbon, San Ramon, Pache and Anacafe 14 varieties. Catuai is known for it's milk chocolate character, while Pache, and Bourbon bring classic sweetness and acidity.
