A subtle stunner, clean and mellow this coffee is laced with yellow fruits, like banana, apricot, and peach. With more development you will find brown sugar sweetness, cooked cherry acidity, and warm spice notes in the finish. This coffee can hold up to a wide range of roasts, but be careful of applying too much heat at the beginning of the roast, because of the high sugar content.
Produced from 100% of Dario’s yellow catuai variety trees this lot is a great example of the classic sweet and mellow profiles expected from this variety. This comes from the higher sugar content within the yellow catuai cherries. Combining these variety characteristics with the washed process leads to a very balanced cup, as the fermentation from washing brings acidity, and lifts the cup.
Grown in the Santa Barbara department of Honduras, this coffee enjoys an extra long maturation time for the cherry to ripen, increasing density of the coffee bean, and bringing complexity to the cup. The slow maturation is due to the high elevation in Las Flores, and its proximity to Lake Yojoa, the largest lake in Honduras. The large cool lake keeps the area cooler, and often blankets the higher elevations in fog, as seen in the pictures. These high elevations, and cool climate make Las Flores, and the surrounding Santa Barbara area harvest later than most of Honduras, with an April to June harvest window most years instead of a Jan-March harvest window in most of Honduras. Santa Barbara has become a destination for quality-oriented coffee buyers with its impressive cadre of Cup of Excellence winners. In most years 30% or more of the CoE winners have hailed from this region.
