This is part of the dry, or natural process for coffee, where the coffee seeds are dried inside of the fruit, resulting in a sweeter and fruiter coffee. After drying for 14-21 days or around 12% moisture content the green coffee beans are removed from the cherry pods, and packaged for export.

Extended drying time (25-30 days), and high altitude (1700-2100m) give this coffee stellar fruit notes.  The classic Bourbon variety gives sweetness and complexity.  Combined with hand sorting, and you get a balanced clean cup.  This beautiful coffee is the result of new experiments by the‚ Rumenerangabo family who've been growing in the Nyamasheke region since 1976.
