In order to assure green coffee beans with distinct cocoa, toffee and honey notes, we've sourced lots from a collection of 60 producers in the Minas Gerais region of Brazil.
These producers grow primarily Mondo Novo and Catuai varieties, and utilize the process of drying the seed inside the fruit, also known as the Natural Process, giving the coffee a fuller body, lower acidity and pronounced sweetness.
