"Buena Vista" is named for the view of from the hillside where this coffee is grown. Looking down on the village of Ataco, and stretching out to the Pacific Ocean, this coffee is grown in the northern stretch of the Ahuachapan-Ilamatepec mountains.
The coffee is 100% Bourbon, and chosen at peak ripeness for this special Natural process micro-lot. The coffee is taken nearby to a now defunct wet mill to dry on the concrete patios. Drying the coffee at this elevation, above 1600 meters, slows down the process and allows for more fruit flavor and sweetness to impart into the bean.
We recommend a lighter roast for this coffee, and especially to not develop the roast too long after first crack. However you can produce a more overt chocolate sweetness with more development. We love the ripe apricot notes, and honey sweetness in lighter roasts, and is our favorite single origin espresso.
