The Yirgacheffee Coffee Farmer's Cooperative Union (YCFCU) has built washing stations throughout the village of Yirgacheffe to ensure that each of their members is able to walk to deliver their cherry. The Konga washing station has developed a reputation as being one of the best, in terms of quality.
Farmers are paid 3 times throughout the season, first when the deliver cherry, second when the coffee is exported, and finally at the end of each year the Union redistributes a portion of the year's profits to all members.
When delivered, the coffee is de-pulped and fermented in water for 36-48 hours before moving to raised beds for drying. The result is a delicate floral and citric cup, the hallmark Yirgacheffe flavor profile.
