Looking for a coffee that brings the funk, but is still super clean? This coffee is by far the cleanest Sumatra we have ever tasted. With notes of mushrooms, dark chocolate, cedar, and butterscotch.
Normally coffees in Sumatra are "wet hulled" in order to dry more quickly, because of frequent rains. However at the Dolok Sanggul washing station they are taking extra care, and being able to not only fully wash their coffees, but fully dry them in parchment before hulling. The extra care shows in the preparation, and the cleanliness in the cup. Removing the parchment removes protection from the elements, and can lead to aromatic or other contamination. Not so with this coffee.
