This bold Honduran cup has a wide range of roast options.  At lighter roasts, find dense sweetness, and tart acidity, reminiscent of lemon hard candy, and a walnut aftertaste.  At darker roasts you'll drive off the acidity, and leave full creamy caramel, and toffee notes.

The coffee's character is a testament to hard work and years of experience.  The Alvarado sisters inherited the farm from the grandfather who had planted the IH-90 variety, a rust resistant variety.  Recently Iris, and her sisters Ana Isabel and Lourdes have been replanting with Parainema a trendy new variety in Honduras prized for it's lime acidity, and rust resistance.  Iris has learned that picking the IH-90 more purple leads to deep sweetness, and full body.  The result of these women's experience was a 3rd place finish in this years "Te Van a Conocer Compa" a microlot competition started within their cooperative COCAFCAL in 2008, to discover and incentive the production of high quality microlots.

Copan is in the western region of Honduras, almost to the border of El Salvador.  It's inland location means warmer and drier weather, which leads to crisp acidity, full body, and elegantly sweet coffees.  The area borders the Celaque National Forest, and the COCAFCAL coop is actively involved in protecting the preserve along with reclaiming lands nearby which had been cleared for beef cattle production.
